
Last week was an amazing week! We tried a lot of new recipes...which we loved! The chickaritos were absolutely fantastic and oh so simple!! I added black beans to ours, because we love 'em, I had 'em! It made enough that I froze the leftovers for a quick lunch.
The Bierocks were really good also. They took a little bit more time that what I had planned (it helps to actually read ALL the way through a recipe! This is hard for me..I like to fly by the seat of pants generally.)...but they were good. The best part about these, is they are cheap! And the fillings can be changed for whatever you have on hand, or want at the time. Definitely worth a try. With these, I also had a lot of leftovers, DH will be able to take these for lunch this week.
Well, onto this weeks menu.
- Brown Rice and Lentil Casserole. This I also got from Gayle over at Grocery Cart Challenge. This is a very frugal recipe, but I just don't know what DH is going to say about it being meatless. We will see I guess!
- Beef Stroganoff with homemade hot rolls and probably peas. It has been awhile since I have made stroganoff, so I'm looking forward to doing it again.
- Chicken and homemade whole wheat dumplings. My husband has been requesting my dumplings for quite sometime now, guess now is as good of a time as any. I boiled chicken from last week, and I saved the broth as a base for this meal. I will toss in celery and carrots and some onion.
- Cheesy Italian Tortellini. I'm a sucker for Italian food. Basically this dish is frozen cheese tortellini, hamburger and italian sausage (as much of each to your liking), spaghetti sauce, diced tomatoes, and shredded cheese (we use mozzerella or an Italian cheese mix). Cook the tortellini as stated on the package. Drain. Throw it and remaining ingredients in 9x13 pan and top with cheese. Bake.
We have Bible study on Wednesday night this week and we will be gone primarily all weekend, so this is all for this week. I do have one additional standby just in case I need it one night. If not, I still have all the ingredients for next week.
I'm really trying to do better with breakfasts. As I said before, this is really hard for me. This week I didn't do too bad, but there is definitely room for improvement! Last week I managed to make a batch of sausage biscuits, and I made pancakes for breakfast on Saturday. Not as good as I intended, but better than before.
So, with that said I still have the ingredients for French Toast Bake, Egg Ham Casserole, and Chocolate Chip Muffins. (wow..I really did bad!)
Here is the plan. I will make the muffins for this weekend on the road, and the remainder I will force myself to make...because if not all the stuff will go to waste! I really don't like wasting!

I always have grand plans for breakfast as well. I just can't make myself get it done, though!!
I plan on making baked oatmeal and stretching it over a few days. We'll see!

Some weeks it's tough to stick to the menu plan. But there's always next week!
