Menu Plan: 1/18-1/24



Last week went really well! I ended up making my husband a Lemon Meringue Pie for his birthday, completely from scratch, and he loved it! Although, it didn't set up!! Does anyone know a trick for this?



I'm still not doing very well on breakfast, so for now I'm not going to post them. I still have things on hand to make something if I wake up in time and get it together.



Dinners:


  • Sunday: Sweet and Sour Chicken. ($2.75) Fried Rice. (.25) Egg Rolls. (HM from freezer)($3)(8 servings=.34/serving)

  • Monday: Lentil Brown Rice Casserole. ($1) Green Beans. (Free from garden)($1)(5 servings=.20/ea)

  • Tuesday: HM Mac N Cheese w/Ham. ($4.73) Apples w/ HM Caramel Sauce. (I'm making this as our snack this week)($4.73)(8 servings=.59/ea)

  • Wednesday: Stupid Easy Crockpot Potatoes and Sausage. ($4) Green Beans.(Free from garden)($4)(6 servings=.67/ea)

  • Thursday: Chilli Pie. ($4.50)(8 servings=.56/ea)

  • Friday: HM Pizza. Dessert.($5.50)(8 servings=.69/ea)
  • Saturday: Leftovers.
TOTAL COST=$22.73 for 7 meals. Average .53/serving.

mmm...yummy homemade eggrolls! looks like a good week!

BTW---everytime you mention your home grown green beans I get jealous--the bunnies mowed mine down last year...gonna try again this summer. We'll see!

I just love the name of Wednesdays menu....Stupid Easy Crockpot Potatoes and Sausage....it made me laugh!

Can you post your recipe for Egg Rolls sometime? We LOOOVE them but I've never made them and can never decide what recipe to try, so I've never gotten around to making them!

I laughed out loud when I seen the name of it, too! But, it is pretty easy! :)

The egg roll recipe is tied in with my Cashew Chicken Recipe. It's at the very bottom. So incredibly easy! My husband thinks that they were too peppery, but me and the kids LOVED them. So much better than store bought.

That sausgae and potato dish looks really good. I about choked when I saw it had 900 calories per serving. Do you do anything to lighten it up a bit?

I must admit that I had NO clue it had that many calories in it! I would almost bet that you could use a low fat/fat free cream cheese or neufachtel cheese in place of the regular cream cheese. That would probably help alot!

I am liking your menu this week. I love how you have provided links to the recipe so I can try them out myself. The Sweet & Sour chicken sounds good along with Easy Crockpot Potatoes & Sausage.
