Menu Plan Week of 6/7-6/13


I really had a hard time coming up with this weeks menu plan. I made it, looked it back over, and still wasn't really "feeling" it. That is how the summer months go for me. While I know we have to eat, I still have a really hard time coming up with meals. Having said that, there is no guarantee that this is going to be what we are eating--but at least it is a guide.
Breakfast:

Dinners:

  • Sunday: A friend came down from our hometown and we had a big lunch BBQ. When dinner rolled around no one was hungry.
  • Monday: Spaghetti. Salad. Garlic Bread using HM French Bread.
  • Tuesday: Chicken w/Artichoke Cream Sauce. Veggies. Leftover Bread. (We never got to this last week)
  • Wednesday: Ground Beef Gyros using these HM Pitas. Pasta Salad.
  • Thursday: Sizzling Rice Soup. Sesame Chicken. Fried Rice.
  • Friday: Pizza Night! Not sure of the kind--thinking supreme and maybe Canadian Bacon and Pineapple. (Aldi had fresh pineapple for $1 again!)
  • Saturday: Gone--AGAIN.

Me, too! So hard to menu plan in the summer. Ball schedules, spur of the moment trips... but it's good to have a plan. :)

My husband and I have decided to plan meals around what is on sale and our usual cheap meals. We used to do this years ago and it saved us a lot of money on food. I have to plan for two weeks because my husband gets paid every two weeks.

I was so excited about the ground turkey sale, buy one get two free, at BigY this week. Until I saw the selection. The packaging is supposed to have a dome to it and they all looked deflated : ( This made me think they weren't so fresh even though they weren't expired. I hope I can hit another store and find fresher turkey. If so, than I was planning on making pasta with turkey meatballs, burritos and turkey cheese burgers : )

I make two pizzas a week, both on the same night, and they last our family of 4 about 3 days.

I'm also planning on making a tuna pasta salad with tomatoes, cucumbers and peas and a chicken pasta salad with tomatoes, black olives, brocolli and chicken in italian dressing.

We are also having mac and cheese and turkey dogs with a veggie a couple times over the course of two weeks.

Of course I will also be making egg salad and tuna salad sandwiches a few times. We love our tuna sandwiches with slices of tomato : )

I have the same problem. There's too much else I want to do besides spend time in the kitchen.

Besides that, it's HOT here, and we don't feel like eating big meals. Maybe it will be a good weight-loss program?

sounds like a good week -- I have motivation troubles in the summer too... especially when the weather gets hot and what I had planned just won't work for me that evening. hope you have a great week!

Be kind to yourself. It does get hard for me with work, family and just stuff to come up with a menu.
Most of the time we're lucky if we have 3 out of the 5 items.
I'm just glad that we're eating at home most days.
