Menu Plan Week of September 27th-October 3rd



After the eventful week we had last week, I can't wait for this week. It's quiet, with just a few things planned.

A few meals didn't go as planned last week, but for as busy as we were--we did GREAT! We didn't eat out once! I came down with a horrible headache that lasted many days and a wonky stomach bug on Wednesday. I didn't make the cabbage rolls, or the pumpkin pie from scratch, so those will be repeats this week.

I'm also still having a hard time with breakfasts. I'm hoping to start going to bed a little earlier, in hopes that I will have an easier time waking in the morning. That is my biggest hurdle with making hot breakfasts in the morning.

I did a light shopping trip at the end of last week, and I managed to score a bushel of apples for $10! I will be using most of them to make and can some applesauce, but I plan to incorporate some into our breakfasts and snacks.

Sunday:

  • Breakfast: Big breakfast at church.
  • Dinner: Chicken Salad for the adults, and leftovers for the children.(.75)

Monday:

  • Breakfast: Eggs and Sausage.
  • Dinner: Chicken Spaghetti. ($2) Green Beans. (free from garden) French Bread. (.40)($2.40)(5 servings=.48/ea)

Tuesday:

  • Breakfast: Steel Cut Oats with apples.
  • Dinner: Crockpot Chicken Cordon Bleu. (~$6) Steamed Veggies.($1) Brown Rice. (.25)($7.25)(5 servings=$1.45/ea)

Wednesday:

  • Breakfast: Oatmeal
  • Dinner: Tuna Melts.($1.50) Salad.(.50)($2)(5 servings=.40/ea)

Thursday:

Friday: Pizza/Movie Night

  • Breakfast: Smoothies.
  • Dinner: Buffalo Chicken Pizza. Pepperoni Pizza.($7)(8 servings=.88/ea)

Saturday:

  • Breakfast: Biscuits and Gravy.
  • Dinner: Pork Stir Fry w/Angel Hair Pasta. ($1.50--I found a great deal on pork!) Steamed Veggies. (.50)($2)(5 servings=.40/ea)

Snacks:

Total Cost of Dinners: $23.90 Average Price per serving=.58/ea

What a great looking week! I didn't get to everything I wanted to last week either ... it happens. Hope your week goes well, and you enjoy the crockpot chicken cordon bleu!

That crock pot chicken cordon bleu looks amazingly simple and good. I like the original but I would never take the time to make it. I've bookmarked this to try soon. I like that it's in the crock pot too. Thanks for linking it up and sharing it.

Looks yummy, Phoebe. Have you considered the idea of making breakfast the night before?

I know that they have lots of make ahead breakfast ideas that you can google, like stratas and oatmeal and stuff! Even french toast type thing that you just pop in the oven the next morning. Just an idea!

I'm with Kayren, snagging that crockpot version right now. My husband loves chicken cordon bleu, but its so much work! So I occasionally give in and buy it in the freezer section, but that doesn't taste as nice, and its not at all economical. Will have to try this one and see how he likes it!

I keep a stash of breakfast foods in the freezer just to make mornings easier. I have muffins, pancakes, frozen sausages, giant breakfast cookies, etc. The kids get to have a healthy breakfast of something available and they can do it themselves (except the little ones). When things run low I replenish!

I have never thought of making chicken cordon bleu in the crockpot! I may try that.

Where did you get a bushel of apples for $10? That's amazing--.25 a pound for apples!

Our stores are usually $1.49-$1.99 a pound for apples. This week (through tomorrow) they are having aplles for .50 a pound (a bushel box for $20. I bought 10 boxes (10 bushels; i.e. 400 lbs of apples). We'll be eating fresh apples, making sauce, having apples in salads, making baked apples, making apple butter, etc.
