
I went into last week with no real intentions of us actually sticking to our menu plan. Our dinners went off pretty well, but that was it. Really that is all that I can ask for in the summer months.
This week is another incredibly busy week for me. I guess I should just get used to it. I'm really hoping that things will go smoothly. In addition to our normal week, I'm hoping to be able to cook some extra meals for our freezer as part of the Week Long Frugal Challenge. You may notice that our breakfasts and snacks are eerily familiar to last week, because we never got to them. :)
Breakfast:
- Steel Cut Oats and Raisins
- Oatmeal Pancakes w/fruit.
- Crepes w/Strawberries
Dinners:
- Sunday: Meatball Stroganoff. Carrots. Biscuits (from a can! First time in many, many months.)
- Monday: Sesame Chicken. Sizzling Rice Soup. Fried Rice. (never made it last week)
- Tuesday: Creamy Seafood Enchiladas w/Jalapeno Cheddar Tortillas. Salad.
- Wednesday: Dinner at Church.
- Thursday: Grilled Chicken Salad w/ Black bean and corn salsa.
- Friday: Going back to the hometown, yet again, for a Float Trip.
- Saturday: At my Mother and Father in Law's.
Snacks:
- Granola.
- Fruit/Smoothies.
- Veggies and Hummus.
- Chocolate Oatmeal Cookies. (I made some of these for the first time for Church Camp last week--SO good! And my daughter, who does not like oatmeal, loves them. Yes!)

It looks yummy, Phoebe! I have never heard of chocolate oatmeal cookies! Num!
I would love the recipe for the creamy seafood enchiladas. We love seafood at our house! This week I am making Rubios lobster tacos (with the imitation lobster meat I got at Hy-Vee a couple of weeks ago for FREE) and Red Lobster's Crab Au-Gratin.

Great looking meal plan! I loved the tortillas although I didn't use jalapenos. I put in some chili powder. :D
